As this is such a delicate green tea, we recommend using water at a temperature of 80 degrees Celsius. Allow the kettle to cool to the correct temperature, about 4 to 6 minutes. Preheat the teapot and add 2 to 3 grams per person. Infuse the leaves for 2 to 4 minutes according to taste.
